For the donuts:
- 180 g all-purpose flour
- 100 g sugar ½ cup
- 7 g baking powder 1½ tsp
- 1 g salt ¼ tsp
- 120 ml coconut milk ½ cup
- 80 ml vegetable oil ⅓ cup
- 1 large egg
- 2.5 ml vanilla extract
- 2.5 g ground cardamom ½ tsp
For the coating:
- 45 g melted butter 3 tbsp
- 50 g desiccated coconut ½ cup
- 25 g sugar 2 tbsp
Preheat oven to 175°C (350°F). Lightly grease a donut pan.
In a bowl, whisk flour, sugar, baking powder, salt, and cardamom.
In another, whisk coconut milk, oil, egg, and vanilla.
Combine both mixtures and stir just until smooth.
Spoon into the donut pan and bake for 12–14 minutes, until golden.
