Ingredients

For the donuts:

  • 180 g all-purpose flour
  • 100 g sugar ½ cup
  • 7 g baking powder 1½ tsp
  • 1 g salt ¼ tsp
  • 120 ml coconut milk ½ cup
  • 80 ml vegetable oil ⅓ cup
  • 1 large egg
  • 2.5 ml vanilla extract
  • 2.5 g ground cardamom ½ tsp

For the coating:

  • 45 g melted butter 3 tbsp
  • 50 g desiccated coconut ½ cup
  • 25 g sugar 2 tbsp

Instructions

  • Preheat oven to 175°C (350°F). Lightly grease a donut pan.
  • In a bowl, whisk flour, sugar, baking powder, salt, and cardamom.
  • In another, whisk coconut milk, oil, egg, and vanilla.
  • Combine both mixtures and stir just until smooth.
  • Spoon into the donut pan and bake for 12–14 minutes, until golden.

Notes

Ingredient swaps
  • You can use desiccated or finely shredded coconut, but desiccated gives a cleaner finish.
