Ingredients

  • 500 g unsalted mixed nuts cashews, walnuts, pecans, almonds, pistachios, or any combination
  • tablespoons rapeseed or vegetable oil
  • teaspoons fine salt
  • 2 teaspoons sugar
  • 2 teaspoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 2 tablespoons chickpea gram flour

Instructions

Preheat Oven:

  • Heat oven to 150°C (300°F).
  • Line 2 baking trays with foil or baking paper.

Prepare the Nuts:

  • Place the nuts in a large mixing bowl.
  • Drizzle with the oil.
  • Sprinkle with the salt.
  • Toss well to coat evenly.

Add the Spices:

  • In a small bowl, mix together the sugar, garam masala, ground cumin, turmeric, and chickpea flour.
  • Tip the spice mixture over the oiled nuts.
  • Toss again so all the nuts are evenly coated.

Bake:

  • Spread the nuts in a single layer over the prepared trays.
  • Bake for 30 minutes, stirring or turning halfway through to ensure even roasting.

Cool:

  • Remove from the oven.
  • Leave to cool completely on the trays—they will crisp up as they cool.

Store:

  • Once fully cooled, transfer to an airtight container.
  • Store at room temperature for up to 2–3 weeks.
