Preheat the Oven: Set your oven to 220°C (fan 200°C) / 425°F. Line a baking tray with parchment if you like easy cleanup.
Toast the Bread: Lightly toast the bread slices on both sides, either in a toaster or under the grill, until just firm and pale golden. Set aside to cool slightly.
Make the Topping: Grate the cheese into a bowl. Add the chopped spring onions and minced chili. Season generously with black pepper and a tiny pinch of salt if needed. Mix everything well.
Tip: To help the mixture spread easily, mash it together lightly with a spoon or fork.
Assemble: Spoon the cheese mixture onto the toasted bread, spreading it all the way to the edges. Press down gently to help it stick.
Bake: Place the topped bread slices on the prepared tray. Bake for about 6–8 minutes, or until the cheese is melted, golden and bubbling.
Serve: Enjoy immediately, while hot and crisp.
