Ingredients

  • 80 –100 g sharp cheddar or any melting cheese
  • 2 thick slices of rustic bread sourdough, country loaf, or white bloomer
  • 2 spring onions finely sliced
  • 1 small green chili deseeded and minced (or use mild chili if you prefer)
  • Freshly ground black pepper
  • A small pinch of salt optional

Instructions

  • Preheat the Oven: Set your oven to 220°C (fan 200°C) / 425°F. Line a baking tray with parchment if you like easy cleanup.
  • Toast the Bread: Lightly toast the bread slices on both sides, either in a toaster or under the grill, until just firm and pale golden. Set aside to cool slightly.
  • Make the Topping: Grate the cheese into a bowl. Add the chopped spring onions and minced chili. Season generously with black pepper and a tiny pinch of salt if needed. Mix everything well.
  • Tip: To help the mixture spread easily, mash it together lightly with a spoon or fork.
  • Assemble: Spoon the cheese mixture onto the toasted bread, spreading it all the way to the edges. Press down gently to help it stick.
  • Bake: Place the topped bread slices on the prepared tray. Bake for about 6–8 minutes, or until the cheese is melted, golden and bubbling.
  • Serve: Enjoy immediately, while hot and crisp.

Notes

  • Use any good melting cheese you like—cheddar, mozzarella, or a mix.
  • If you prefer less heat, swap the green chili for a mild chili or a bit of finely chopped bell pepper.
  • Lightly toasting the bread first helps keep it crisp under the cheese.
  • The cheese mixture can be prepared ahead and stored in the fridge for a few hours.
  • For extra flavor, you can rub the toast with a cut clove of garlic before adding the cheese.
