There’s nothing quite like hot, melty cheese on toasted bread, especially when you add a little kick of chili and fresh spring onions. My spicy cheese toast is quick to make and perfect for when you need a snack that feels a bit more exciting than the usual. I love how the sharp cheddar melts beautifully and pairs so well with the warmth of green chili. It’s simple, satisfying and best enjoyed straight from the oven.

Spicy Cheese Toast

Spicy cheese toast topped with sharp cheddar, spring onions, and a hint of green chili. Quick to make and full of flavor, this simple snack is perfect for when you want something hot, melty and a little bit spicy.

Ingredients

  • 80 –100 g sharp cheddar or any melting cheese
  • 2 thick slices of rustic bread sourdough, country loaf, or white bloomer
  • 2 spring onions finely sliced
  • 1 small green chili deseeded and minced (or use mild chili if you prefer)
  • Freshly ground black pepper
  • A small pinch of salt optional

Instructions

  • Preheat the Oven: Set your oven to 220°C (fan 200°C) / 425°F. Line a baking tray with parchment if you like easy cleanup.
  • Toast the Bread: Lightly toast the bread slices on both sides, either in a toaster or under the grill, until just firm and pale golden. Set aside to cool slightly.
  • Make the Topping: Grate the cheese into a bowl. Add the chopped spring onions and minced chili. Season generously with black pepper and a tiny pinch of salt if needed. Mix everything well.
  • Tip: To help the mixture spread easily, mash it together lightly with a spoon or fork.
  • Assemble: Spoon the cheese mixture onto the toasted bread, spreading it all the way to the edges. Press down gently to help it stick.
  • Bake: Place the topped bread slices on the prepared tray. Bake for about 6–8 minutes, or until the cheese is melted, golden and bubbling.
  • Serve: Enjoy immediately, while hot and crisp.

Notes

  • Use any good melting cheese you like—cheddar, mozzarella, or a mix.
  • If you prefer less heat, swap the green chili for a mild chili or a bit of finely chopped bell pepper.
  • Lightly toasting the bread first helps keep it crisp under the cheese.
  • The cheese mixture can be prepared ahead and stored in the fridge for a few hours.
  • For extra flavor, you can rub the toast with a cut clove of garlic before adding the cheese.

  • Tomato Boost: Add thin slices of fresh tomato under the cheese mixture.
  • Herb Finish: Sprinkle fresh coriander, chives, or parsley on top before serving.
  • Spicy Kick: Mix in a pinch of cayenne or smoked paprika with the cheese.
  • Cheese Upgrade: Use a blend of cheeses, like a little Gruyère or aged Gouda with cheddar.
  • Open-Face Sandwich: Spread a thin layer of chutney or mustard on the toast before topping with cheese.
